Well, what's your speciality or what's your main point of interest? 
First, there is always stuff to be speed optimized (or even MMXed).

Then, if you know anything about video encoding (MPEG) or are interested
in learning, you might help implementing and testing new features (or
finding bugs in old ones), e.g. adaptive quantization is far from perfect,
yet. 

In any way could use a set of test applications that document how to use
XviD API and help comparing different versions in speed and image quality. 

There was also some demand for pre-encoding image filtering. Maybe you
could help on this?
